
Spiced Blueberry Pear Cobbler

Sweet, spiced, and just a little rustic, this Blueberry Pear Cobbler brings together the best of fall flavors in one bubbling cast iron skillet. It’s the kind of dessert that feels right at home by the campfire or around the family table.
Makes 8 servings
Ingredients
For Fruit:
- 4 cups frozen blueberries
- 4 medium pears, peeled and chopped
- 3/4 cup sugar
- 3 Tbs. butter
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 1 tsp. vanilla extract
- 1/4 cup four
For Cobbler Topping:
- 2 cups flour, sifted
- 1/4 cup granulated sugar
- 1/4 cup, plus 2 Tbs. brown sugar
- 1 1/2 sticks (3/4 cup) butter, melted
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp. salt
Directions
- Preheat your oven to 350°
- Melt the butter in your cast iron skillet over medium heat then add the peeled and chopped pears, blueberries, granulated sugar, flour, cinnamon, and salt. Stir everything together well.
- Continue cooking the mixture, stirring frequently until the sugar and flour have dissolved. Remove from the heat and stir in the vanilla extract.
- To prepare your cobbler topping add flour, granulated sugar, brown sugar, cinnamon, nutmeg, and salt in a bowl and combine.
- Add melted butter and vanilla extract and mix until well combined. (You’ll want some of those large clumps for a good texture on your cobbler.)
- Add all of the cobbler mixture to the top of your fruit mixture in the cast iron skillet and place in the oven to bake for 35-40 minutes or until fruit filling is bubbly and cobbler topping has browned a bit.
- Serve hot out of the oven or at room temp and enjoy all of the cozy flavors of fall!
PRO TIP: Top with vanilla ice cream for an extra layer of goodness!
